Vegtable lasagna

That sloppy looking mess you can see above is my first attempt at a vegetable lasagna!

Now I make a mean meat lasagna, even if I do say so myself! However i have never delved into the vegetarian realm before!

Unfortunately the making of this meal was overshadowed by my excitement of my new toy (a GoPro hero 4). I didn't let the tomato sauce reduce down enough and I took it out the oven too early! However it still tasted great and will be very welcome in my lunchbox tomorrow!

Meal number 2 is over, I think I will definitely be making more than one new meal a week this year!
