comfort food (again)
First time I've cooked with preserved lemons, so they got Blipped.
Another Moroccan recipe - chicken tajine with lemon & olives. Also with spices and a whole bunch of veggies which you can choose depending on what's looking good in the shop. Or in my case, what's lying around needing to be used quickly.
So, celery, Brussels sprouts (not very North African), carrots and broad beans.
Big success and plenty left for lunch tomorrow. The extra shot is the finished dish.
The recipes for the dish vary hugely (but based around the chicken, lemon & olives) so I'm going to have fun trying some others another time. The Hairy Bikers' one (below) seems OK, but don't worry about putting in saffron if you don't have it or don't want to spend the money. My recipe deosn't use it.
