Bean Salad

The good old fashioned bean salad is making a comeback in our house. Last summer my friend was telling me about how she cooks up a good quantity of beans, adds a marinade of half malt vinegar and half sugar and puts them in a big jar in the fridge where they keep for weeks.
Then we she needs a summer salad in a hurry, she gets some of the beans and then adds whatever vegetables she has on hand...fresh beans, cauliflower, capsicum, courgette, red onion etc etc.

And that is Meg's summer cooking hint for the day!!!!! Picked up a selection of dried beans from Vetro, my favourite food importers this morning, and have now put some aside to soak overnight before cooking tomorrow.
