Dill & Fennel pesto
I bought fresh dill a few days ago to go with a mustard chicken dish but I had tons left over (along with some fennel, which I mistakenly purchased thinking it was dill - amateur's mistake!)
I didn't want the herbs to go to waste but was at a loss what to do with them. And then I realised that I had all the ingredients for a pesto, except for the basil.
So, just like magic, 'hey pesto!' It made for a great afternoon snack with some fresh tomato and toasted onion bread (from the Manna House bakery). In fact, it was so moreish, I think I might just have some more for dinner!
