Superb Carrot Cake

Well, so says Mary Berry in her book - Fast Cakes. I've had this book for years, long before the Bake Off hit the screen.

Icing made and about to be plonked on top of the cake.

Superb.

PS - eagle-eyed blippers may have spotted a carrot in the foreground. Just to say, this carrot wasn't harmed in the making of this cake.
Same can't be said for its friends.
