Thai Pasta with Squash & Eggplant

I learned today that taking pictures of food is HARD.   This is a new dish I created tonight after being inspired by a Thai pasta dish we had over in Peng Chau a couple days ago.   We love Asian food - which typically is served with rice or noodles, so this is a litttle out of the norm.

My daughter leans vegetarian - so I try to make dishes with meat on the side (that we carnivores can add) - I made a minced pork with spices and lemon grass which blended quite nicely for us carnivores. 

It was extremely YUMMY if I do say so myself!  (Now I need to write down what I did so I can do it again.)
