smokin'...
...at the Bare Bones Bbq food where the queue told the story of fine food offerings, one of many at Bite of Bellingham's food, beer and booze festival.
Serious pig sliders, apple smoked ribs and Grandma Cott's chicken skewers would no doubt have gone down a treat with Uisce's Famous Bloody Mary...featuring Granny Strong's Jalapeno Vodka (extra)...but no strong liquor for us with the winding Chuckanut Drive awaiting.
One of America's Scenic Bways travelling through Whatcom and Skagit Counties the road is a section of the Pacific Highway in the Chuckanut Mountains. Misty and wet today with low cloud tangling with trees and blurring coffee and a stroll through Edison.
Settled in 1869 and named for Thomas Edison (hence the lightbulb extra) the tiny community of about 130 is, with the equally tiny Bow, on the Bow-Edison food trail.
Featuring farms, foods and spirits all sorts is available along the trail including farm gate eggs, apples and blueberries, goats cheese, oysters and even whiskey!
Oh and chuckanut is an Indian word meaning 'long beach far from a narrow entrance.'
