Had a busy morning around the house. At the weekend I like to try and do some baking. I really prefer baking to cooking, probably because of my sweet tooth!

Anyway today I tried a recipe I have not done before. It worked well although I didn't have any ginger in the house so had to adapt it slightly. Tasted great without it though!!

Here is the recipe:

Ginger Sponge

Ingredients
5 eggs, separated
6 oz Caster sugar
1 tablespoon golden syrup
2 oz self-raising flour
2 oz cornflour
3 teaspoons ground ginger
1 teaspoon ground cinnamon
2 teaspoons cocoa
¾ cup thickened cream

Method
Grease 2 deep 20cm round cake tins and pre-heat oven to 180c.
Beat all the egg whites in a medium bowl until soft peaks form.
Gradually add sugar, beat until dissolved between additions.
Beat in egg yolks and golden syrup.
Sift dry ingredients and fold into mixture.
Divide mixture equally between prepared tins.
Bake in oven for around 18mins.
Turn sponges immediately onto wire racks to cool.
Beat cream until soft peaks form then join cakes with cream.

Recipe best made on day of serving
Storage: covered, in refrigerator
Freeze: Unfilled cake suitable
Microwave: Not suitable
