Tomato Tart

Unroll sheet of ready-made puff pastry. Score lightly round edge to make approx 1 inch border. Brush inner rectangle with coriander pesto. Slice tomatoes and arrange on top. Scatter some crumbly goat's cheese over if you like. Bake at Gas Mark 6 for about 25 mins. Serve with some fresh basil leaves torn up and scattered over.
All in all, quite a success - only drawback was that I couldn't get the all-butter puff pastry I usually prefer, which would have made it even yummier.
