Bufete Fase, Porto
Porto's signature dish is the Francesinha, a sandwich stuffed with meat, topped with cheese and drowned in a delicious spicy sauce - usually a secret variety unique to each good establishment. It's the sort of sandwich you can only have one of in a weekend, accompanied with a note: "FAO ARTERIES . . . INCOMING!!!!"
I thought if I was going to try one I might as well go to the place in Porto that is often regarded as the best for a Francesinha - Bufete Fase at Rua Santa Catarina 1147. It did not disappoint. It's a tiny place - seating for 12 only, 14 at a push, and chef Jose Meneses Pinto Filipa is seldom called upon to serve anything other than a Francesinha. Here he prepares two of his famed specialities before placing them under the grill and adding the all-important molho de Francesinha (secret sauce). Obrigado senhor Filipa!
