Ratatouille

It is very cold today so I have been busy making a huge eggplant stew or Ratatouille (Kiwi Style).
 We were to be going to a Pot Luck dinner but it has been cancelled so I now have enough food to feed us for a few dinners.
 I love it when something is prepared and in the fridge or freezer, that I can just haul out and heat up.
