Inspired by today's Ottolenghi recipe in the Grauniad, I headed down to our local organic butchers. This is what was left of the shoulder of lamb after our piece had been cut off.
And there's the man who did the cutting.

I was delighted to find they had the broad beans and coriander I need for it as well.
