Father's Day Meal

I browsed through some cooking magazines about a week ago and I found some recipes that I thought looked really good.  I decided on three different dishes for my Father's Day lunch that I had today.
I shopped for everything yesterday, I prepped as much as I could ahead of time.  In as much as I read all the ingredients and saw the wonderful photos in the magazine of what I chose to make, I neglected to read the instructions all the way through.  I had no idea how much work went into each dish. 
Today was an absolute riot in my kitchen.  Even though it was Father's Day and I didn't want to bother my husband with helping me, I had to wave the white flag and beg him to give me a hand. 
One of the things I made was a salad with watermelon, strawberries, pecans, chopped red onion, pieces of roast chicken, crumbled feta cheese and topped with a balsamic/honey drizzled on top.  I took a photo of it for my blip because the recipe told you to slice the small, seedless baby watermelon in rings, taking out the inside watermelon and then placing the watermelon slice on top of a chilled salad bowl.  You then fill it with the salad.  I loved the way it came out and more importantly, my guests loved it too. 
The combination was great. 
I also made a roasted root vegetable salad and Mediterranean Chicken over couscous.  We all needed a nap after lunch.
