Rosemary, Lemon and Coriander Focaccia
One of the things I really enjoy about making bread is the opportunity for a bit of spontaneous creativity. I hadn't done a focaccia for a while but had a packet of bread mix for it in the cupboard, so decided to add rosemary from the garden, some coriander pesto and lemon olive oil. Pleased with the results; toasting it really brings out the flavours.
