What was necessary to run a hospital in 1729?


I was working in Edinburgh's Royal Infirmary today. When you finally manage to negotiate the damned rotating entrance door (if you ever had to, you will know what I mean, I'll blip them sometime as a visual explanation...), you walk down a long hallway with a history of the Infirmary and its patrons displayed on the walls. I never paid much attention to it, but I have noticed this board today and I thought it's quite entertaining, especially trying to imagine how much is a "peck of bread" or what makes a bottle of ale "chapping"!

Apologies for the prominent flash, but I already spent good ten minutes on my knees trying to get a good, clear picture and receptionists started to look a bit suspicious...
