In the soup

These beautiful tomatoes went into my lunch-time soup today. They tasted even better than they looked.

Well, I'm glad you asked... sweat a small onion and a clove of garlic in butter until transparent. Add 450g halved ripe tomatoes, a big handful of basil leaves, 250ml boiling water, salt and pepper to taste. Simmer for no more than 10 minutes, then whizz to a smooth texture. Serve with a swirl of sour cream and sprinkled with more basil leaves.
