Elizabeth sponge.

So, amongst the Diamond Jubilee celebrations, one simply cannot make the time to bake a little celebratory treats for loved ones to share. Thus, I baked a Victoria sponge (or two), and need I say that it was eaten rather quickly?!

Given the occasion, surely this cake should be re-named, even if only temporarily, as Elizabeth's sponge. Perhaps, the likely naming of Big Ben as 'Elizabeth Tower' is quite enough!
