BHAJIS

Been doing some research into onion bhajis - think I've cracked it!!

Apart from the onions, garlic, cumin, turmeric, green ginger, fresh coriander, chilli etc... The magic part's in the batter - 2/3 gram flour - 1/3 rice  flour!!

The rice flour gives them a lovely crisp crunchiness to complement the wonderful flavours of all the other ingredients. Yesss!

You may have gathered the Chinese supermarket was open today :o)
