A MODEST START

The few herbs that survived yet another failure of our irrigation system while we were away in the Karoo, revived with some loving attention. 
New additions have expanded the collection that now includes - too many chives, a vigorous basil plant, mint, reviving parsley, rocket, thyme, miniature spinach, fennel , a small origano plant and lots of tiny coriander seedlings coming up all over the place. 
Our first spinach dish was an omelette with ricotta and spinach filling.
Delicious!
 Amazing what can be done with a modest collect of fresh herbs.
