Butternut and lentil stew

I was very brave and cooked this meat-free dish this evening. Very brave because my husband does like his meat!
I found this recipe in the paper, as part of an article by Mary Berry to introduce National Meat-Free week (it was last week). Basically, the dish consists of leeks, onions, peppers, butternut squash and Puy lentils.  And yes, he quite liked it!
