New Twist on Quesadillas!

A quesadilla is usually a large corn (sometimes flour, depending where you are) tortilla that is folded in half and filled with chicken, meat, cheese, and whatever else you like. We joined friends for lunch in one of their favorite places, and I could see why! 
This quesadilla was made of a soft cheese that was melted on a grill and cooked till crispy, then filled with local sauteed fresh mushrooms, greens, and other veggies. It was surrounded with sections of grapefruit, oranges, radishes, and a mountain of grated carrots. We all had fresh orange juice to drink. This cost the equivalent of $4.00 US. I'm definitely going back.
