Cheffy on a Monday lunch time

Another Raymond Blanc recipe, this time for my friend Laura. 

'Nage de poissons' is fish in a herb vegetable sauce. The vegetables are pre blanched. The cucumber, peeled, deseeded, salted, frozen, washed, then dried (a real revelation).

The resulting dish looks as vivid as a picture in one of those 1960's cook books.
