OTTOLENGHI'S MULTI-VEGETABLE PAELLA

Yotam Ottolenghi is my favourite chef.
He manages to create the most subtle & exquisite flavours, combining spices & aromas which excite & explode the palate like no other!
I made this for lunch today as Mum was coming round.
I'm happy to report that it was a huge success.
