rhubarb tart

Edit: On special request of MPP26 I added the recipe in case some of you want to try. It's worth the effort! I hope everybody will be fine with the german measurements.

Rhubarb Tart

For the dough/pastry/base:

150 g flour
100 g butter
a pinch of salt
60 g powdered sugar
1 eg

Knead all the ingredients together, form a ball, wrap it into cling foil and put it into the fridge for half an hour. Then roll it out and put it into a 20 centimeter form. Blind-bake (with baking parchment on top) for 15 minutes (200 degrees celsius).

For the filling:
300 g (or more :)) rhubarb (peeled)
25 g raspberries
120 g sugar
2 eggs
200 ml cream
50 ml milk
30 g flour
2 vanilla beans

Cut the rhubarb into pieces of about 1 centimeter and put it onto a baking tray. Add the raspberries, the core of 1 vanilla bean and 80 g sugar. Let it be for 2 hours, some liquid should appear over time. Then put it into the oven (160 degrees celsius) until the rhubarb is still firm to the bite.

Mix the eggs, cream, milk, 40 g sugar, core of the other vanilla bean and allow it to stand for half an hour.

Put the rhubarb onto the base, add the cream and bake at 160 degrees celsius for about half an hour.
