A passion for meat
I visited Scothot today in Glasgow at the SECC. It's a trade show for the hospitality industry. On the Quality Meat Scotland stand a master butcher showed how by cutting a piece in a certain way you transformed the cut into something that could be cooked quickly and rare rather than long and slow
It tasted good too!
