Barrels

I was walking through Lerwick today and came across a stack of barrels with verse to the herring gutters  and packers of past years.  
Bend to the bottom
lay the herring heads
to the barrel side
pretty for the buyer
so the cooper says.
Finish off the layer
cover in salt
same again and salt
same thing again
and salt.
