Carrot Cake

I'm not one for baking but for one reason or another we decided to make a carrot cake today. I've never made one before but it was very easy and tastes pretty good too. Luckily I had the foresight to halve the ingredients, otherwise we'd have been on the carrot cake diet for weeks!
