Ah, Stuff it!

Baked chicken breast stuffed with black pudding and wrapped in bacon with a lemon, garlic and onion sauce and boiled baby potatoes and string beans. 

This is the first time I've tried to stuff a chicken breast so I was pretty happy how it turned out (yes I stuffed it and wrapped it myself) I would have preferred a bit more black pudding in the chicken but I didn't want to push my luck and have it all fall apart. The sauce was a bit sharp, the garlic clove I broke off the bulb was much larger than expected and I possibly added a bit too much lemon juice as well, on it's own it was a little over the top but with the strong flavour of the black pudding it worked quite well.
