Green bean ice bath

Blanched and then plunged into an ice bath to arrest further cooking, these beans were destined to marry with garlic, ginger and salt to accompany a chinese steamed chicken.  Butterflied and encased in a paper wrapped parcel, the chicken was bathed in butter, soy sauce and honey, and fragrant with star anise, ginger, cinnnamon stick and bruised cardamon pods.
