Parotta Master

This man is a master parotta maker in a small hotel by Palayamkottai market. He and his team have been working and kneading and oiling the mix for half an hour before folding the dough into balls and pressing them down onto this heated metal plate above a wood burning oven. The parotta balls are put onto the hot plate in concentric rings working from the edge into the centre - they were most particular that I wait till the plate was full before taking this picture.
He is now sprinkling ghee on them before turning them. Once the parotta are browned on both sides, they are served, 4-6 as a set with a variety of different sauces. They have a spiral appearance because of the way they have been kneaded and folded.
Hot, fresh, crispy and delicious!
