Muffins

A busy day today. Shopping first thing followed by doing the washing and then baking cakes as tomorrow is the first Saturday in the month.  Today I made a very easy Lemon and Almond Cake. Only 4 ingredients so apart from whisking eggs and sugar for 5 minutes with an electric whisk it doesn't take long. These are actually called Christmas Pudding Cakes and do taste like a light version of Christmas Pudding. I think I can get away with it this month but maybe not again until next December!
