genoa cake

Made Mary Berry's Genoa Christmas Cake today.  There is almost a kilo of fruit in it!  I used spelt flour and as it's a fattier grain, it made the cake batter a lot more liquid so, maybe you can guess?  All that fruit fell right to the bottom :)
