Hangikjöt - Smoked lamb
In my family it's a tradition to have hangikjöt/smoked lamb for dinner on Christmas day. Daníel had bought a smoked leg of lamb from our friend Pálmi and it was huge! He cooked it for hours in the oven, covered with foil, and used the meat-thermometer to get the best results for tender and moist lamb. We then took it with us and had dinner at my parent's house. Laufabrauð, green beans from Ora and all the usual trimmings were provided and dessert was my mother's heavenly homemade strawberry-frómas and vanilla ice-cream.
Oh-boy, during Christmas we always eat too much...
