Great British Fake Off, Part 2.
The lovely JazzyB set this challenge a while ago and we baked our cakes, had them judged and put them away until today. My cake is not a traditional heavy fruit cake, but my grannie's wartime egg free cake. It has been in my freezer ( it's not the type that has lots of alcohol in it, so doesn't keep too long) and the topping added today.
The topping is a florentine topping, with extra fruit, baked again for ten minutes to set. This results in a glossy finish, rather than using the traditional apricot glaze.
I chose this type of topping of course because I am utterly hopeless at cake decorating....
