Apple bavarois

Apple bavarois served with cider sorbet and fancy tuiles. It was a good night tonight, we cooked for 63 people! Even better day tomorrow as i'm planning on harvesting wild garlic with little chef and my girlfriend. I haven't told them yet, i'm enticing them with a forest floor full of bluebells!
