Great Sandwiches of the World...The Tuna Sandwich!

Everyone is happy when it's tuna sandwich day. Tom because it makes a change from ham and only appears in his lunchbox on days when I'm not working as it takes so darn long to prepare, and the cats as they get to lap up all the drained tuna juice. I have to say that cat's have amazing hearing, and even 4 rooms away can tell whether it's a can of tuna (Yes!!!!) or tomatoes (Meh!) being opened.

So on to the sandwich. The filling is canned tuna, chopped spring onions, salt, pepper, balsamic vinegar and salad cream, which I layer between baby spinach and weightwatchers multigrain bread. The spinach stops the bread getting soggy.

Yummy!
