Marmalade

We bought our Seville oranges in February, but as our marmalade making takes a whole day which we didn't have at the time, we froze them.
While I was away this last weekend, my husband defrosted half of them and made 10lbs of marmalade!
Rich, dark and very flavoursome, it beats any shop-bought stuff.
He tells me that I can make the other half! We use about 18lbs a year - of course I eat only a very little bit!
And it is very good in sauces - try it with blueberries and serve with pork!
