Quick Cinnamon Swirls
Super quick, no faffing with yeast, from thought to mouth in less than 30 minutes if you are organised!
Recipe
3 cups SR flour, large tsp cinnamon, ¼ cup icing sugar
1 cup lemonade
1 cup sour cream
1 cup brown sugar (I used demerara and caster and a bit of muscovado to use up some odds and ends)
1tbs cinnamon (use less if you like, but if you're not keen why are you making cinnamon rolls, hmmmm???)
½ cup melted butter
Sieve the flour, cinnamon and icing sugar into a bowl, add in the lemonade and sour cream and mix gently....you are aiming to have a ball of unsticky soft dough...press this out into a rectangle on a lightly floured board, it'll be about as thick as a slice of bread.
Scatter over the sugar and cinnamon and spoon over about ½ the melted butter, roll up the long sides of the dough, into a swissroll shape and slice into fat slices
Place the slices onto a tray so that they are just touching and sprinkle over a little more sugar and sloosh the remaining melted butter over the top. (line the base of the tin or they'll be devils to get out.)
Into a hot oven for 20-25 minutes till golden and risen.
The icing is just glacé icing trickled over the top.
Mr C&D suggests some nice fat raisins would go well, that is on the list for next time. And maybe some walnuts?
