A taste of Italy

K. was quite happy to be my "food test bunny" (what a manly statement!) this evening. I've been enjoying getting into the kitchen and experimenting with foods since we moved into our new flat. The luxury of no more shared student kitchens and the time to cook without others cooking around me!

Tonight I made Bruschetta with Tomato and Basil. It was delish, as stated by K. and myself (modestly!). Needless to say, this will be something I'll be making again in the near future.

Ingredients:

7 plum tomatoes
2 cloves of garlic (although I used 2 tea spoons out of a tube)
1 table spoon of extra virgin olive oil
1 tea spoon balsamic vinegar
8 fresh basil leaves chopped
Salt and ground pepper to taste
1 baguette of French or Italian bread
Each slice of bread coated with olive oil

Method:

Preheat oven to 230?c
Cut tomatoes finely into quarters or sixths.
Put tomatoes, garlic, extra virgin olive oil and vinegar into a bowl and mix. Add the chopped basil, and the salt and pepper to taste.
Slice the baguette diagonally into 1/2 inch thick slices and use a pastry brush to coat the top of each slice with oil.
Cover an oven tray with tin foil, place each bread slice oil side down on the tray and cook for 5-6 minutes or until the bread starts to turn golden.
When ready, place bread olive side up onto a serving plate and top each slice with the tomato mixture.
Serve immediately and voila!
From nothing to food in less than 15 minutes =)
