Garlic ciabatta
Had a lovely garlic ciabatta to accompany our main dish we know as Ian's Pasta.
To our certain knowledge, we have never met Ian but it was a recipe passed to us from friends who had learned it from their neighbour, Ian. There is no way of knowing what Ian called this dish but it used to be one of our staples and tonight was a lovely reminder.
Ian's Pasta is basically pancetta fried in a pan with olive oil, garlic and crushed chillis. Add a small tin of sweet corn and then mix in any preferred pasta that has been boiled while preparing this lot. The heat the dish is entirely dependent on the volume of crushed chilli added; sometimes it is just nice and other times it blows the top of your head off.
Tonight was just perfect. Thanks Mrs W.
