Relaxing family day in Ronda, with far too much food!

Great homemade paella and of course Birthday cake to celebrate grandma's 96th - but my sister-in-law gave me these - 'Yemas del Tajo' which are an institution here in Ronda - as she knows I love them.

Made by a a small 'pasteleria' called Las Campanas in the centre of town, they are little more than egg yokes (yemas) and sugar in tiny cup cake papers. The Tajo in the name refers to the outcrop of rock with its sheer cliff upon which Ronda is built.

Andalucia has a lot of sweet recipes based on egg yokes - the wine industry used egg whites to clarify the wines and in Jerez, for example, the wine and sherry makers gave all the yokes to the convents who invented Tocino de Cielo...(I'll blip that another day....)
