The obligatory pancake shot

Yep, yet another pancake shot!

Except this one was made using the Almond Pancakes recipe from my Low-GL Diet Cookbook by Patrick Holford and Fiona McDonald Joyce, so instead of being based on wheat flour, it is made with quinoa flour and cornmeal instead. Well, to be fair, the recipe did say cornflour - but as I have fine cornmeal I thought what the heck what's that between friends?

Anyway, they were made with:

50g (2 oz) cornmeal
50g (2 0z) quinoa flour
teaspoon xylitol
210ml (7 fl oz) soya milk
1/2 teaspoon almond extract
2 & 1/2 tablespoons water (except I forgot to add that!!)
1 medium egg
4 teaspoons of coconut oil for frying (1 teaspn per pancake)

And I topped them off with:

flaked almonds
lemon juice
and a drizzle of agave syrup

And I have to say they were quite delicious! Mind you, I only had two (TWO, I hear you squeak?) as Mr A had the other two, yet I didn't feel over-full afterwards, despite serving them as a dessert after my main meal.
