Honeycombe

After seeing a friend's facebook update yesterday about making Honeycombe I was possessed by a need to make my own.

If you are similarly possessed then gather together golden syrup, sugar, bicarbonate of soda, a large heavy pan, a large whisk and a shallow tray

Put 4 tablespoons of golden syrup into the pan with 100g of caster sugar and put 1 and a half teaspoons of bicarbonate of soda into a small dish

Allow the syrup and sugar to melt slowly together, and then boil briskly for two minutes.....a golden colour only slightly darker than the golden syrup is your aim. AND DO NOT STIR THE MIX WHILE IT BOILS!

Remove from the heat, throw in the bicarb and whisk like you have never whisked before.....bearing in mind that hot sugar is very burny so no heroics, when it is all frothed up and foamy and you fear you have created a sticky lava hot alien life form, tip the pan contents onto the tray, lined with parchment if you like an easy life, and leave to cool

When it is cold bang the tray on a hard surface break into pieces and dip in chocolate or scoff as you see fit.

The chocolate covered stuff has been declared the best.
