Pomegranate

Found this pomegranate in the bottom of a shopping bag: I'd bought it last week at the Friday market to decorate the middle eastern salads I'd made for my birthday and completely forgot about it. Luckily it's still delicious.

One of my favourite pomegranate recipes is faisanjan, a wonderful Persian dish made using ground walnuts, ground pomegranate seeds, pomegranate juice, lemon and honey as a marinade for duck or chicken, cooked with onion, cinnamon and cardamon. I've adapted it a bit, you're supposed to use pomegranate molasses but I prefer to use the fresh fruit. Serve with lots of fresh green herbs, rice and salad, delicious!!!
