Stuffed breaded chicken

I had never made stuffed chicken until a few days before this photo, nor had I ever breaded chicken on my own. I had a few girlfriends over for a potluck and wanted to make something nice for them, and decided to try my hand at breaded and stuffed chicken after my boss had suggested it.

This one was stuffed with ricotta cheese, spinach, sundried tomatoes, garlic, and pesto.

Needless to say, it won't be the last time I make this.
