All Natural!

Had this wine in the rack for a couple of months and decided tonight was the night for a wee drop. They don't add any additional manufactured yeast to this wine, and instead rely on the natural yeast found on the skins and in the air to start a carefully controlled fermentation.

Either way, they have done a cracking job with this wine, resulting in a well balanced, wine with elegance and structure derived from the 10 months spent in French oak.

A Chilian delight.
