Tradition « oblige »

For the third year since we moved to the Baie, w_p and I follow a local tradition and task ourselves in canning cod livers - 12 lbs yielded 60 125ml jars which were set to boil for three hours. A slice of onion, a slice of hot chili pepper from the garden and ground pepper accompany the livers in the jar and add a personal touch to a delicacy appreciated by many friends and family members especially as gifts around Christmas time.

This is what they looked like before the process. And since I was handling the delicate organs, I must thank my loyal assistant who clicked the pose.
