Ginger and Rhubarb muffins

January has been ginger month. Ginger biscuits, Ginger cakes and now Ginger and Rhubarb muffins.

It's an experimental recipe of my own invention, and is now written in my book of invented recipes along with the comment "Si says - the crystalised ginger takes a bit odd". Not the highest praise.

I suspect the proof will be in how long they hang around.
