Mushy marshmallows

This is the squishy result of my attempt at raspberry ripple marshmallows. I think it's time to invest in a) a sugar thermometer and b) an electric whisk. The raspberry ripple bit kind of sank and made a jammy raspberry layer. They're quite squishy and soft, I'm hoping that as they dry out they'll go more mallowy like the christmas ones did. Fingers crossed!
