I never knew I would enjoy eating Brussels sprouts, but cooking them like this makes them delicious. Thinly slice a red onion and fry until softened, add some chopped garlic, cumin powder and caraway seeds. Add some carrots (I had some tofu in there too, but it didn't really work) and when almost cooked add a decent amount of shredded sprouts and cook for a further 4 min approx. The sweetness of the onion works really well with the bitterness of the sprouts. I may have to cook this as part of christmas dinner in December.
